Hello & happy Monday everyone! I am finally back to regular posting now after a week of chasing my tail and catching up on life/sleep after Coachella. I’m well & truly back on the wagon now and thought I would get back into the swing of things by sharing one of my favorite recipes of late – my buckwheat bars!
These bars are the perfect treat to pack and bring with you to work – they definitely satisfy the sweet tooth cravings! I mentioned in my last recipe post that buckwheat would be featuring a lot in my upcoming recipes and I meant it! I have another coming your way very soon (I need to get through my massive bag of buckwheat groats!). These buckwheat bars are perfect if you love bananas – since they are one of the main ingredients. Chocolate and banana has definitely been one of my favorite combinations since I was a kid, it reminds me of being down in my cousin’s house and barbecuing whole bananas with dairy milk stuffed inside – don’t knock it until you’ve tried it!
So like I mentioned above, the past week has just been crazy trying to catch up on work and sleep but Coachella couldn’t have been more worth it. I definitely went a bit overboard on the snapchats (niamhos21) so I do apologize for that, but it was just surreal being there! There’s a second vlog from the weekend coming this week too so keep an eye out for that one, I’m excited/terrified to see it! Also, Summer has well and truly landed in New York and I’m giddy with excitement for the next few months, my first visitor of the Summer arrives this weekend and I’m so excited to catch up with one of my best friends. I can’t believe it’s almost seven months since I have seen the majority of my friends, missing people is one of the worst parts of emigration without a doubt!
- 2 small bananas
- 40g of almond butter
- 20g of maple syrup/agave/honey
- 5g of cacao
- 220g of buckwheat groats
- 1/2 cup of dark chocolate chips
- Preheat oven to 180 Celsius
- Mash the bananas
- Add in all the ingredients except the buckwheat and combine well
- Fold in the buckwheat groats
- Line a baking tray with grease proof paper
- Spread out the mixture about 2 cm thick
- Bake for 20-25 minutes, or more depending on when the mixture firms up
- Allow to cool once they are nice and firm
- Cut into bars and serve
- Keep in an airtight container in the fridge for up to 3-4 days
