Chia Seed Sundae

Hello! I hope everyone’s week is off to a super start. I would have liked to share my Chia Seed Sundae recipe on a Sunday but how and ever we’ll just pretend it is…

I don’t think I ever did so much walking as I did this weekend. One of my best friends from home was over visiting me so we quite literally walked the legs off ourselves exploring the entire city from top to bottom. On Sunday we walked 19,800 steps according to my phone, I actually probably shouldn’t have checked because that just encouraged me to reward myself with some chocolate when I got home, which I am trying not to do! I mentioned on my Snapchat (niamhos21) yesterday that I’m 1 week into my new training plan with Recalibrated Bodies. Dark chocolate is actually a part of my diet so I’m obviously taking advantage of that & loving life while I’m at it. 95% of the time I am strictly sticking to my plan so a few extra squares of chocolate won’t kill me after an extra long day of walking. More on my new plan later on in the week…

Chia Seed Sundae

Ingredients

  • ½ cup of chia seeds
  • Enough almond/cashew milk to cover
  • 1 tablespoon of Greek Yoghurt
  • Vanilla flavour drops from MyProtein
  • 1 handfull of mixed berries
  • Strawberries to top it off
  • Coconut flakes to decorate

Instructions

  1. Soak the chia seeds in your milk of choice overnight in a bowl in the fridge
  2. Add additional liquid in the morning if necessary until you get a moist (sorry for using that word) consistency
  3. Add in a few flavour drops and Greek Yoghurt to the chia seeds and mix well
  4. Mash your mixed berries in a separate bowl and set aside
  5. Layer your chia seed mixture and berries is a fancy sundae glass for maximum Instagrammable-ness (If you don’t have one, a jar will do just fine!)
  6. Chop up your strawberries and add them as your topping with the coconut flakes

This Chia Seed Sundae is perfect as a weekend breakfast and it’s super tasty. Chia seeds are a great food for staying full throughout the day, they’re full of fibre, Omega-3, protein and healthy fats. The Greek Yoghurt adds that extra bit of protein and makes it a lot creamier and delicious.
