I love eating & drinking anything green. It’s so nice to feel like you’re staying on track with all of those healthy promises that we make to ourselves every day by consuming those leafy greens as often as we can, & it’s even better when they’re in something that tastes good too!
Green really is the healthiest colour going at the moment. If I’m ever feeling as though I haven’t gotten enough greens into my system over a few days, I always add some greens powder or some spinach to my Superfood Chocolate Smoothie. But since I’m quite picky about how my food looks, I am never happy with the browny-green colour that I get from that mixture. So that’s why I decided to come up with The Green One. It looks obnoxiously healthy, and that, combined with the taste is why I love it!
When I buy a bag of spinach each week, I alway throw over half of it out because I never get around to eating it. I used fresh spinach in this recipe to try and get my moneys worth for once but you could use frozen spinach either if you like! I used coconut milk in this smoothie to give that added sweetness – I hate getting the taste of spinach in my smoothies so I add everything I can to mask it.
Recipe for The Green One:
1/2 an avocado
1 cup of spinach (or as much as you like depending on how heathy/unhealthy you’re feeling)
1 cup of coconut milk
1 green apple (chop it up before blending)
1 peach (if they’re not in season, throw in a few berries or another apple)
Blend it all up in the blender and serve! If you think it might be a bit warm, add some ice!
